How Bilona ghee is made

A woman churning curd in a clay pot with a wooden bilona, beside brass pots of curd and a jar of ghee

Making ghee from curd takes more milk and more time than making it from cream.

Step by step

  1. Step 1: Milk is set into curd

The milk is boiled, cooled and set into curd (dahi).

  2. Step 2: The curd is churned

The curd is churned with a wooden churner, the bilona, until butter (makkhan) separates from the buttermilk.

  3. Step 3: The butter is heated

The butter is heated until the water evaporates and clear ghee is left.

  4. Step 4: Strained and packed

The ghee is strained and filled into jars.
